Hey all! ![]()
Hope you’re enjoying your weekend so far!
Yesterday I took an active rest day & walked a local lake with
my friend Sarah! We did 5 miles in about an hour & ten minutes!
It was beautiful outside …

I also went to the chiropractor yesterday,
I’ve been going since I was little & I have to admit
that I hardly ever get injured!
(knock on the nearest piece of wood)
But I really needed it because I felt like I may have strained my chest muscle
& I ‘m the kind of person that does not like to be in pain
so I figure out what is wrong ASAP.
I decided to give my upper body a rest yesterday
& I’m just going to focus on LEGS today! ![]()
Speaking of working out, the other day
MamaCAKES & I decided to throw some handstands into our work out!
We did these up against a wall & held them for 30 seconds 5 times!
These are a great total body work out
especially for your CORE because you’ve got to keep that tight to keep your balance!
I really wanted to attempt a Handstand Push-up
but my body was a little fatigued from our earlier work out
so I did a few half way handstand push-ups!
I love being able to challenge my mom & she also challenges me!
You can see our POWERSLAM THROWDOWN here if you missed it!
Onto the FOOOOOD:
Lately I’ve been coming up with so many clean recipes
& I can’t wait to share them all with you!!
Power Recipe of the DAY:
Savory Caramelized Onion POWERCAKES
Ingredients:
1 Red Onion
2 Cups of Almond/Coconut Milk
1.5 TB Dijon Mustard
1/4 Cup Coconut Flour
1 tsp Onion powder
Sea Salt & Pepper
Directions:

Chop your onion & caramelize in a medium-high heated pan
with olive oil & minced garlic!
Once the onions are a nice golden brown, remove from heat
& let COOL while you prep your other ingredients.
In a mixing bowl:
mix 2 cups of Almond/Coconut Milk
with 1.5 TB Dijon Mustard

In another bowl I got my dry ingredients together:
Mix the Coconut Flour with your seasonings!
COMBINE Dry Ingredients with your WET Ingredients
& your Caramelized onions!!
**After mixing, you may need to add more liquid so they form into patties and are not dry..
I added another 1/4 cup of almond/coconut milk.
Form them into POWERCAKES
& transfer onto a medium-high heated pan.
Brown for a few minutes on each side with some olive oil.

THESE WERE SO YUMMY!!

I ate a few with some hummus on top and a lean protein on the side!
I also served a few over a fresh salad!

These POWERCAKES were a part of my Sunday PREP DAY!
Along with some cauliflower mash, spaghetti squash, & roasted veggies!
Hope you enjoy!!

Question:
Do you prefer sweet or savory food?
I personally like them both! Some times I crave sweet but other times I crave savory.
I tend to combine a lot of sweet & savory things together!

great idea to do handstands! I am totally adding them to my next workout!
Love the new recipe. they look fantastic!
Love me some carmelized onions
It totally depends on my mood whether I want a sweet or savory breakfast.
That lake looks gorgeous!!
Wow. That recipe sounds amazing! Sometimes I get crazy onion cravings.
Yumm! I am usually more of a sweet girl, but lately I’ve seriously been into both and less of sweet
Those handstands are tough! Good on you and your mama
I think I’m more of a sweet girl … but sometimes nothing beats a big bowl of savoury deliciousness. It’s the ultimate comfort food!
So I definitely did some medicine ball slams and handstand holds after my lift yesterday as a part of my conditioning, those are killer!
these sound great. i love carmelized onions. i think i shall make these soon….and possibly with the addition of bacon =]
I am so trying handstands in my workout today, they would be super effective.
Just stumbled on your blog and I am so glad I did! You are an inspiration of strength and health. I can’t wait till I have a kitchen and can try some of your recipes.
Ooh, these sound really good! I love onions…and I need to try caramelizing them!
you and your mom kick ass. and that recipe is so creative! have a great weekend!
These look AMAZING, Kasey! And I’m totally souped they’re vegan. I’ll have to try them soon!!!
Would chickpea flour work?
yes it would!! I love chickpea flour!! :]
OH MY HANDSTANDS. This morning I did a chest/shoulder/core workout and ended with handstands. 3 for 30 seconds each and MAN, it felt awesome! Men were looking at me like I was INSANE… a 22 year old girl throwing up handstands at 6am… not the usual site for the “weight pit” at my gym
Thanks for the idea. My abs and shoulders were feeling GOOD!
wow only onions in the powercake? looks amazing!
