Banana Omelet

I got creative the other day in the kitchen…
#storyofmylife

And came up with a sweet take on a savory meal!

Banana Omelet
1 Medium Banana
4 Egg Whites
1 Whole Egg
Cinnamon
Vanilla Liquid Stevia

*Blend all ingredients in my magic bullet.
Put on a low-medium heat pan with coconut oil
& cook until browned on each side!
A few minutes on each.

Topped with Peanut Fluff
(1/4 cup
protein plus peanut flour with a
few tablespoons of water and a few drops of stevia)
*mixed together

And

RAW PEACH CHIA JAM
1 Fresh Peach
2 TB Chia Seeds
1/4 Cup Water
Few Drops of Stevia
(all blended in a blender and let sit in fridge to thicken
for at least 20 ish minutes)

*I did mine the night before.

    Mine was really watery. Is that how it should be? I followed the steps, but subbed the whole egg with flax egg. Could that be it?
