3 Ingredient Plantain Flatbread

Happy Thursday everyone! Lately I’ve been super inspired by the lovely Purely Twins with their plantain recipes! I’ve always been skeptical of plantains…like, what are they?

Basically a plantain is similar to a banana in shape & texture. They are a big bigger and actually have a more starch but lower sugar content than bananas. I found out that people in parts of South America, Africa, & especially in the Caribbean usually grill, fry, or prepare the plantain before they serve it as a staple in their diets!

I bought the plantains that were still a bit green but had some yellow in them. I’m not going to lie – I ended up forgetting about them because I put them in a spot I thought I’d remember and then forgot – GO ME! Once I re-found them, they were pretty ripe with not much green and still worked well in this recipe.

I was going for simple – my stomachs been a bit off lately so I’ve been trying to keep things basic with few ingredients (that is, until I was starving in the morning and added toppings which were totally worth it!)

I introduce to you 3 Ingredient Plantain Flatbread
– well 4 if you include baking powder Winking smile

2 Medium Plantains

1/4 Cup Ground Flax

1 Cup Milk of choice

1 tsp Baking Powder

Makes 2-4 servings!
Depending how hungry you are. I ate half the recipe for breakfast the other morning before the gym to fuel up!

Directions:

1) Blend ingredients & let sit for 5 minutes to thicken.
(I used my ninja)
2) Pour into 2 greased pie pans
(I used a spoonful of coconut oil to grease the pan)
3) Bake at 375 degrees for about 25 minutes
(until slightly browned)

**Cinnamon would also be a yummy addition if you knew this would be a breakfast bread.
– I also think it would be a great savory bread!

After it baked, I let it cool for a bit & then topped it with some melted coconut butter & cacao nibs that I then stuck into the freezer for a bit until it made a hard shell.

I then thought…hm, plantains, coconut, cacao, & chocolate sauce?
For Breakfast? YES PLEASE.

You are all awesome! & I am loving how you are TRUE TO YOU and use ingredients that YOU like!

Speaking of true to you, I was just talking with someone last night about how she likes all types of fitness & she was inspired that I show how I like all types of fitness. I also met with Joe Vennare last night of Hybrid Athlete & we both agreed how we love ALL types of workouts! Hence the “hybrid athlete”.

Truth is, I just love being active! Whether it’s Zumba, CrossFit, Kickboxing, Spinning, Kayaking, Yoga, or putting in my headphones & heading to the gym for a great back & bicep day or leg day – I truly enjoy it all. I think finding what YOU enjoy is so important! Don’t worry about what everyone else is doing. Everyone likes different types of fitness so it’s up to YOU to find what works for you and makes you excited to MOVE each day!

I personally think that there is no one-size-fits-all diet or workout plan. Everyone is different and I think it’s great to be inspired by peoples choices.

For example, this week I made it to CrossFit once, did 2 days of workouts (upper body one day & legs yesterday) at the gym, & today I am going to enjoy a Hot Yoga class! I can’t wait. I look forward to each day because I truly enjoy what I’m doing.  Hopefully this helps you realize that whatever you choose to do to be healthy and happy is what’s beautiful!
